Can you believe it’s May already? 2020 has been a crazy, strange, and uncertain year, but man, is it flying by! Maybe that’s a good thing. Regardless, I am going to embrace the month of May and everything it has to offer- The flowers, Cinco De Mayo, Mother’s Day, and Memorial Day weekend! Cinco De Mayo is tomorrow, and I’ve been thinking of all the delicious food and drinks that come with it including churros! I mean, who doesn’t LOVE churros!?
I’ve had churro cupcakes from a bakery here in Houston and I fell in love with them. I thought they would be a perfect Cinco De Mayo themed dessert for my family. Did you ever watch Semi-homemade with Sandra Lee on the food network? I loved watching her create delicious dishes but with some shortcuts to save time (And she always had a cocktail to match her recipe theme- I just love her)! I decided to channel my inner Sandra and come up with my own Semi-homemade Churro cupcake recipe and make them just in time for Cinco de Mayo. So even though its tomorrow, you can easily make these in a flash and you only need 5 items from the store to do so!
Semi-homemade Churro Cupcakes Shopping List:
- 1 box of yellow cake mix
- 1 container of vanilla frosting
- Ground Cinnamon
- Vegetable oil
- Cane sugar
Step 1: Pour dry yellow cake mix in a bowl (I love Miss Jones) and add 1 1/2 teaspoons of ground cinnamon to it. Mix with a whisk until combined. Follow the recipe on the cake box to create cake batter and bake cupcakes.
Step 2: Mix 3 tablespoons of cane sugar with 1/2 teaspoon of cinnamon in a small bowl and combine. Set aside.

Step 3: While cupcakes are cooling, scoop out vanilla frosting into a mixing bowl or kitchen aid mixer. Add 3/4 teaspoon of ground cinnamon. Mix frosting for a few minutes on medium speed until fluffy.

Step 4: Heat 2 inches of vegetable oil in a quart saucepan. (When it has little bubbles around the edge, it’s usually ready for frying). Take one or two cupcakes and cut it into 1-inch cubes. Make sure you have two clean plates, (one with a paper towl on it) and your cinnamon/sugar mix nearby. Place a few cupcake cubes in the oil and let fry until golden brown. (They are small so will cook fast! Maybe 10-15 seconds) Scoop out when ready and place onto the plate with a paper towel on top. Wait about 15 seconds to cool and then toss them in the cinnamon/sugar mix. Place them on a clean plate. Repeat until all cubes have been fried and tossed in the mix. These are like mini churros for the top of the cupcakes! And you can absolutely snack on these as you cook them 🙂

Step 5: Assemble your cupcake! Using a piping bag and tip, pipe frosting onto the cooled cupcake. Add mini churro cubes on top. You can also add some little fiesta flag toppers to make them extra festive!
